Quinoa Rice Pudding

 

Quinoa is high in protein and fiber, and it tastes wonderful. It is a great substitute for rice and oatmeal. The Slimtevia is an all natural sugar substitute. It is 90% less calories than sugar for the same sweetness, low carb, pH, balance, chemical free, gluten free and non-GMO. What a great duo! Both are diabetic friendly.

 

Ingredients

 

½ cup quinoa, cooked following instructions on box

1 ½ cups almond milk

3 Tbsp. Slimtevia

1 Tbsp. olive oil

1 tsp. organic virgin coconut oil

1 organic range free egg

1 tsp. cinnamon

1 tsp. vanilla

1 cup raisins

 

Directions

 

--Preheat oven to 350 degrees F

--Add all remaining ingredients to pot with cooked quinoa, mix together well.

--Pour all ingredients into a 9” pie pan coated with extra virgin olive oil.

--Bake for 30 minutes.

--Eat hot or cool, as a breakfast cereal with a medley of fruit or as a dessert. Enjoy
